    By myarticlenetwork | February 11, 2012

It really doesn’t have to be difficult to make a delightful homemade carrot cake recipe , and I’ll show you exactly how with this flavorsome recipe just here! Out of all of the carrot cake recipes I’ve attempted, this homemade carrot cake recipe is one of the simplest and also one of the most flavorsome. Your children will surely love and delight in this yummy sweet and healthy treat.

Ingredients that you are going to need:

    - 2 cups carrots (grated)

    - 1 cup sugar (granular)

    - 1 cup oil (vegetable)

    - Half a tsp vanilla

    - One and a third (1 1/3) cups flour (all-purpose)

    - One and a half (1 1/2) tsp baking powder

    - 1 1/2 tsp. bicarbonate of soda

    - 1/2 tsp. salt

    - One and a half (1 1/2) tsp cinnamon

    - Three eggs

    Directions to prepare:

    1. First of all, you need to heat your oven to 350F.

    2. In a medium glass bowl, mix the vegetable oil and the sugar. Now, beat in the eggs, one at a time, and then add the vanilla to the mixture.

    3. Take a new bowl and mix in the dry ingredients, and then the wet ones. Now add the carrots.

    4. Grease a baking pan and pour the batter inside it.

    5. Now, place the baking pan in the oven for thirty-five (35) minutes.

    6. And that’s it. Now allow it to cool down for a few moments before cutting a big piece of your new favorite homemade carrot cake recipe. Make an additional copy of this delicious dessert for a friend as well – they will certainly ask you for it!

Don’t forget that the eggs can be eliminated from the recipe for anybody who’s vegan.

The recipe is safe for people with nut allergies; however, Celiac’s might need to substitute rice flour or something similar to it. The consistency of the batter may be a little thinner with rice flour and the cake may not actually rise.

Also, if the eggs are removed from the recipe you might find that the flavor of the sodium bicarbonate will become more prominent.

And finally, if nuts are not an issue, the best choice is cashews. They’ve got a delicate sweet flavor that really compliments the cake.

Enjoy this quick and easy homemade carrot cake recipe. This recipe is also a very good alternative for kids who don’t like veggies but love eating cakes. This is definitely a healthy and tasty pudding that you just have to share with some of your dearest friends and love ones.
