Try This Potato Pancake Recipe And Get Rid Of Leftover Potatoes

Everyone loves a big holiday meal. And most people love the leftovers. But it always seems that the one food item that lasts the longest is those mashed potatoes. They seem to linger around even as all the other food is disappearing. A lot of times they just do not get eaten and have to be thrown away. Maybe what you need is a good potato pancake recipe.
People may love them the next day, but after that, they may start wishing for something else, especially once the gravy is gone! A great way to use up those extra potatoes is to turn them into something entirely new-pancakes. You may find your family wishing there were leftovers of these.
Before you get started, check to see that you have all the necessary ingredients. Of course you have the potatoes. You also need flour, milk, an egg, onion, vegetable oil (canola, corn or a vegetable blend) and a little salt and pepper. You may substitute bacon drippings for the oil.
To make four pancakes you will need two cups of potatoes. Add to the mashed potatoes one egg, 1 / 2 cup of flour, three tablespoons of diced onion (more to taste) and 1 / 4 cup of milk. Thoroughly mix together and form four equally sized patties. If the mixture is too sticky, shaping the patties on wax paper or tin foil might make things easier for you.
Coat a hot (but not smoking) frying pan or electric skillet with vegetable oil or bacon drippings. Fry each patty for 3 minutes on each side, pressing down on them occasionally with a spatula. To prevent the spatula from sticking, first spay it with a cooking spray. Pancakes are ready when they turn a golden brown. Make sure the insides are hot and that the onions are tender.
The pancakes can be served with pork, chicken, fish and beef. They also make great appetizers. For variety, add to your potato mixture some crumpled bacon or shredded cheese. In addition to salt and pepper, you can top your creation with butter, sour cream, gravy, ketchup, melted cheese sauce, or hot sauce.
